Foie Gras, Foie Gras, How Do I Enjoy Thee? PinkyPiggu counted at least 33 ways!

It wasn't love at first bite when it comes to foie gras, the well-known French delicacy. Back then, I wasn't impressed with the liver's quality nor taste, but somehow there was a certain inexplicable allure about the controversial lobe that warranted another chance.

Needless to say, foie gras has now found immense favor with my palate. Be it duck or goose liver, classic pan-seared or terrine rendition, the unctuous richness and distinctive taste of foie gras is utterly impossible to resist.

The different ways of enjoying foie gras is rather beyond our imagination nowadays too. From western-style (burger, hot dog, pizza), to Asian cuisine (pan-fried dumpling, steamed bun, sushi), and even dessert (ice cream, macaron, profiterole), we can actually find it all on this tiny island of ours!

1. All-day Breakfast

2. Bao (Chinese Steamed Bun)

Not just your usual Chinese steamed bun, this is decadence luxuriating with truffles, braised veal cheek and foie gras within that warm, soft, fluffy bun.

4. Cannelloni

The Spanish restaurant by Michelin Chef Carles Gaig serves the most amazing traditional cannelloni stuffed with foie gras, beef, pork smothered in luxurious truffle cream! This dish was launched in the family's very first restaurant in 1869. A beautiful classic that has withstood the test of time!

5. Chawanmushi (Japanese Steamed Egg Custard)

Piping hot and silky smooth steamed egg custard topped with cubes of goose liver and goose liver sauce. Gratification in each spoonful!

6. Classic-style

The classic-style foie gras is usually paired with a fruity sauce to balance out its richness. Saveur's foie gras with apple and raisin infused with port wine and vanilla bean is one of the most affordable offerings without comprising on the quality. My personal favorite is from Gunther's, a perfectly-executed slab of premium goose liver with crunchy nutty crust contrasted with an inner melting tenderness served alongside with mousseline of green apple.

8. Fried Rice

Delicious grains of garlicky egg fried rice with bursts of beefy goodness and duck liver's fatty creaminess! We experienced bliss in a bowl.

9. Fusion-style

Fusion-style foie gras at a coffeeshop stall! Immanuel French Kitchen serves it up with a Japanese twist, coating the lightly-charred duck liver with black miso and served it with a light flavorful dashi broth and thin crunchy strands of 'noodles' made from daikon (white radish). Chef-owner Immanuel Tee offers this dish at his latest venture, Garçons, as well.

11. Gyoza (Japanese Pan-fried Dumpling) 

The humble gyoza is being atasified at Mikuni with Kagoshima Wagyu and foie gras. Ooh that thin layer of skin! Ooh that juicy combination with the unmistakable burst of foie gras flavor and delicate taste of Japanese beef! I had fallen into the wanton ecstasy of gluttonous love. Expensive, but worth every cent!

12. Hot Dog

The American street food is given a gourmet touch at The Mustard Incident. Veal hotdog topped with creamy bits of foie gras and purple mustard sauce with a side of crispy thick-cut fries. I tried not to think of the calories. Just eat lah!

13. Ice Cream 

Yes, you're reading it correctly! It's foie gras ice cream with a tinge of savoriness! Surrounded by a moat of sweet mango gazpacho and topped with sprinklings of pistachio "dust", the chilled soup blossomed into an ethereal breath of spring inside my mouth.

14. Macaron

Sweet pastry shell filled with savory foie gras mousse. Magic unfolds upon initial bite. An unlikely union which un-un-unbelievably led into gastronomic bliss. What more can I say? This is a must-try!

16. Pasta Sauce

You can't see the foie gras in this dish, but you can taste the umami flavor of foie gras white cream sauce in every mouthful of al-dente linguine with smoked duck. Simply wondrous!

17. Pizza

Gourmet wood-oven pizza delighting with mozzarella cheese, mascarpone, porcini mushrooms, Italian black truffle and pan-seared goose liver. If it sounds good, it tastes even better! This is now one of my favorite pizzas :D

18. Profiterole

The foie gras profiterole at St Regis' Brasserie Les Saveurs has certainly got me excited over it! Instead of typical sweet cream, the French choux pastry ball is injected with foie gras mousse of welcoming savoriness. An unique creation which is more than deserving of our tummy space! Superb!

19. Ravioli

I always call ravioli as the "ang mo wonton" lol. Le Petite Cuisine has a very price-friendly prawn and foie gras ravioli in light crème sauce. District 10 offers a treat of goose liver stuffed in little pockets of pasta which was superbly flavorsome in a blend of parmesan sauce and scamorza cheese. There's a foie gras ravioli to suit every wallet.

20. Risotto

Carbs lovers would not want to miss this carnaroli risotto with saffron and a slab of pan-roasted duck liver. Love the home-marinated port wine cherries which effectively cut through the heaviness of this dish. I went into a food coma after finishing the whole plate lol!

21. Salad

I love the foie gras salad at Halia Raffles Hotel, but sadly, it was taken off the menu recently. Glad to find that the newly-opened Fickle Mussel offers a salad rendition as well. Quality and execution of the liver can be better, but for its price, should I even complain at all?

22. Satay 

Skewers of duck liver grilled over charcoal fire and served with heart-shaped homemade raspberry sauce! I wouldn't imagine a zhi char eatery to come up with this until I tried it for myself haha!

23. Scotch Egg


Inspired by British cafe culture and great classic comfort foods from around the world, The Study serves a premium version of scotch egg with a runny yolk center, Iberico pork and foie gras! Fantastic texture, but any foie gras flavor was barely discernible.

24. Siew Mai (Chinese Steamed Dumpling)

A link of Chinese culture with Western ingredient! Siew Mai, the dim sum staple, is fancified with the addition of foie gras and served in a delicate broth.

25. Slow-cooked Egg

Besides satay, the zhi char eatery also serves their charcoal grilled foie gras with a 60 minutes slow-cooked egg topped with truffle salt. Though presented in a coffee cup, this is certainly not your usual coffeeshop kind of eggs!

This Japanese-style clear soup at Kinsa Sushi contains mushrooms and chunks of foie gras! The luscious aroma of foie gras in every sip is too too too wonderful. Haru Haru Japanese (which took over the former premises of Kinsa Sushi) serves a similar version.

27. Sushi

Vinegar-seasoned rice topped with fresh prawn and a generous slice of pan-seared goose liver. The best way to savor it is to put the whole sushi into the mouth in one go and let the myraid of flavors enveloped your palate. Beautiful!

28. Tapas

A very innovative modern tapas pleasuring with savory-sweet caramelized foie gras terrine on crisp puff pastry. The perfect pop-in-the-mouth snack to go with drinks.

29. Teppanyaki

Foie Gras can be prepared over Japanese iron griddle as well! The result is pieces of melt-in-the-mouth goodness sealed with a thin layer of outer crispiness. I paired it with garlic fried rice for a more complete meal. Awesomerrific to the max!

30. Terrine / Au Torchon

Terrine or Au Torchon (depending on the shape) is another more typical way of enjoying foie gras. I was told that Absinthe has one of the best versions in Singapore. True enough, their foie gras terrine with port wine version is very much a joyful one, utterly lovely when coupled with warm brioche. Love the refreshing celery stalk chutney by the side too.

31. Tonkatsu (Deep-fried Pork Cutlet)

Tonkatsu, the beloved Japanese dish is given a new twist at Tampopo. Thinly-sliced pork is layered and stuffed with foie gras and truffle before being deep-fried to outer crispiness. The intertwining flavors and texture are too awesome for words. Definitely one of my favourites!

Cubes of Wagyu beef grilled to medium rare perfection and paired with fatty, rich foie gras. This is happiness in a bowl.

33. Xiao Long Bao (Chinese Soup Dumpling)

The foie gras added a layer of distinctive, enjoyable taste to the classic Xiao Long Bao. Paradise Dynasty offers it at a very affordable price with various outlets across Singapore. For a rendition further enhanced with truffles and dining with a panorama view of the Marina Bay area, Sky on 57 would be the place to go.

Lastly, Foie Gras Rojak! Glad I had the chance to try the localized goodness before it was taken off the menu at the defunct Agnia. It made a brief comeback at last year's Ultimate Hawker Fest, but I do hope to see its permanent revival someday.
