Be it freshly-shaved truffles or truffle oil, having that distinctive fragrance in our noodles can undeniably add some winning dimension to the staple carb dishes. When truffle meets noodles, sparks fly.
Such a delightful match, I even attempted to cook my Truffle Wanton Mee sometime back haha. But when time or washing up is a concern, nothing beats the convenience of walking into a store and having a bowl of truffle carboliciousness served to you hassle-free.

Chilled Angel Hair

Its look was deceptively unassuming (my colleague said it appeared too "pale" haha) and the taste, absolutely D.I.V.I.N.E.! Every strand of the angel hair pasta is nicely chilled and tossed in chives and kombu dressing, with generous infusion of truffle oil and luxurious touches of Oscietra caviar propelling every bite into intense orgasmic heights. So delightful, so gratifying, so exquisite in flavors, I was literally bubbling with excitement. This signature cold angel hair pasta is a definite must-try when you're at Gunther's.

The casual eatery at Shaw Centre specializes in handmade artisan egg noodles which made us smile whenever we eat it. Delicious definitely! With the launch of Truffle Oil Noodles, it certainly gives us another good reason to smile even wider as we bite into those strands of chewy firmness coated with ambrosial braising sauce and subtle notes of white truffle infused olive oil. The aromatic bowl is complemented with green vegetables, slow-cooked egg and stewed Chinese black mushrooms, but if you need your meat like us, a portion of char siew can be added for only $3.80. I want! I want!

A hippy take on well-loved zhi char perennial favorite, Hor Fun, which is essentially flat broad rice noodle served with gravy. The highlight of this dish was undoubtedly the sliced US prime beef which is superbly quick-fried over the wok, resulting in a very nice charred aroma. Bonus points to the chef for not over-tenderizing the meat as commonly bastardized in typical Chinese zhi char stalls. The gravy's flavors and truffle scent needs to be more pronounced though.

Mee Pok

It was only after some asking that I realized that what is described as "thick noodles" on the menu is actually mee pok, the flat yellow egg noodles of Teochew origin used in many Singapore hawker dishes. Utterly silky and springy in texture, the plate of mee pok was very well stir fried and enjoyable. The addition of truffle oil elevated the light and simple dish into a richer level. Mee pok can be atas too!

If truffles is your thing, then Casa Tartufo is definitely your place. The Italian trattoria at The Scarlet Hotel offers a truffle-centric menu all year round, and is best known for their signature tajarin, a thin, flat egg pasta that is common in the Piedmont region of Italy. Brilliantly executed to a gentle al-dente bite and coated in a lip-smacking sauce made of veal jus and mushroom blend, every mouthful screamed of carblissfulness rounded with generous shavings of fresh truffles. This is a must-try!

Ramen, the indispensable wheat noodle dish of Japanese cuisine! Typically served in soup, Kanshoku Ramen serves a refreshing dry version perfumed with truffle oil and truffle paste. Oh my goodness, it was such an absolute delight that my friend asked for another portion to take away right after finishing an entire bowl! The ramen's texture was done just right, and the slightly-torched char siew and onsen egg were well-executed too. Surely worth coming back for more!

Somen
- Hana Japanese Restaurant
- Flying Truffle Somen, $20++
Somen, another type of Japanese noodles, is the thinner and lighter alternative to ramen. Typically served chilled with a dipping sauce, Hana Japanese Restaurant upped the game by having it "flying" on a pair of suspension chopsticks. The interesting presentation made it an instant hit on social media. Attention grabbing antics aside, the silky, slurpilicious bite of the flying truffle somen did fly us to the happiness moon.

Wanton Mee

I wonder why didn't anyone thought of adding truffle oil to our everyday hawker noodle dish earlier? The combination actually works! Bee Kee does a wonderful rendition brimming with springy noodles, generous slices of char siew, deep-fried and boiled pork dumplings. Tummy-fulfilling truffle happiness can be had for only a small amount.
