Antoinette Unveils 5 New Cakes Inspired By The Deliciousness Of Summer. A Sweet New Season Is Here!

A: "Why do you like to eat desserts?
B: "Because I'm not sweet enough so trying to make myself sweeter!"

Lol! Okay, seriously, who doesn't enjoy desserts? Chef Pang Kok Keong aka Sugar Daddy makes sure we keep our sweet tooth happy by unveiling 5 new cakes to his repertoire of desserts at Antoinette.

Inspired by the fruits and flowers of summer and their accompanying smells, flavors and colors, each of these new creations brings its own distinct delight, promising something for everyone.

Jasmin is a French-Oriental blend of chiffon cake, walnut sesame, jasmine flower mousse, osmanthus gel and mango jelly, topped with an abstract "blossom" of white choclate which holds snow fungus and wolfberries. The cake is very light in flavor, with nougatine adding texture and the jelly a tang of freshness.

Summer is a raspberry mousse containing pistachio bavarois, forest berries jelly, pistachio sponge and pistachio glaze on an almond sable. Its gleaming enamel-like pistachio-hued exterior certainly catches the eye! The cake's fruity lightness is enlivened by the earthy nuttiness of the pistachio and almond sable.

Pavlova is a frilly concotion of rose petal meringue, finger sponge, yuzu cream, lychee, rose crème mousseline, and raspberry jelly. The flavor chemistry of yuzu, rose and lychee is tenderly refreshing and evocative, and the crispiness of the meringue balances nicely with the lavish softness of rose crème mousseline. This is so pink and so pretty!

Lemon Meringue
Lemon Meringue consist of lemon mousse, praline bavarois, lemon confit, Italian meringue, cocoa sponge, finger sponge, kirsch, lemon marmalade and praline feuilletine. There are tiers of tartness and citrusy freshness and rich depths of chocolate.

Available in 3 sizes: 3.5cm x 8.5cm $9.50+ / 12cm x 12cm $42.50+ / 17cm x 17cm $85+

Orangette consist of dark chocolate mousse, chocolate genoise with grand marnier, orange marmalade, and orange praline feuilletine. With its pretty piped slower sitting on top, this creation combines the richness of chocolate with the soft smoothness of mousse, and would prove irrsistible to those with a weakness for dark chocolate.
