The Yumminess of Pumpkin Cake with Salted Egg Yolk ~ Recipes Included!



Pumpkin, my friend described it as the Powerhouse of Vital Nutrients! Rich in antioxidants, vitamin and minerals but low in fat and calories, the vibrant orange-hue melon is also an excellent source of fiber, which is essential for healthy digestion. What I adore most, is its natural sweetness! It led me to cook creamy pumpkin soup and pumpkin rice previously which earned good reviews from my friends. Yummy just by thinking about it! Pumpkin is definitely more than just a Halloween decoration lol.

Salted Egg Yolk, another of my favorite ingredient. Whether it is salted egg yolk prawns/crabs, salted egg yolk in rice dumpling and mooncake, salted egg yolk with plain porridge or even salted egg yolk ice-cream from Tom's Palette, give me salted egg yolk and I'm a happy PinkyPiggu.

Yes, I've now married 2 of my favorite ingredients together, the sweet and the salty! 


In music, a theme is a repetitious melody that is varied during the course of the piece. With the use of variation, the theme became more than just a passing melody. (Eg: Variations on a Theme of Paganini by Johannes Brahms)

In cooking, we can experiment with theme and variation too! Using the Same Key Ingredients, Same Electronic Appliance, I've created the Variations on Theme of Pumpkin!

In this post, I'm gonna show you how. Get ready for the recipes!


Presenting to you.... Pumpkin Cake and Pumpkin Roll, with Salted Egg Yolk! Both are done using the different functions of the same Panasonic Microwave Oven!

Many of us has the misconception that microwave cooking is unhealthy, but the reality is that microwaves are a much more convenient and time-saving way to cook food. They have similar effects on food as conventional ovens or stoves, and may even result in less vitamin destruction than conventional cooking methods. With Panasonic Microwave oven, I can even bake using the oven feature, grill or steam food too!

Some of the steps can be done simultaneously (the preparation of pumpkin, salted egg yolk, shallots and dried shrimps), thus saving much time. While I was waiting for the pumpkin cake to set, I pacified my growling tummy with the pumpkin rolls first. The rolls are healthier as they're baked, not deep-fried, yet gives the same crispy crunch.


{RECIPE}  PUMPKIN CAKE WITH SALTED EGG YOLK

Ingredients
  • 300g Pumpkin (cubed)
  • 4 Salted Egg Yolk
  • 3 Shiitake Mushroom (diced)
  • 30g Dried Shrimps (soaked, drained)
  • 100g Rice Flour
  • 30g Tapioca Starch
  • 80g Shallots (sliced)
  • 550ml Water
  • 1 Spring Onion (diced)
  • 3 Chili Padi (sliced)
  • 4 tablespoon Oil

Seasoning
  • 1 tablespoon Light Soya Sauce
  • 1 teaspoon Sugar
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • ¼ teaspoon Five-Spice Powder
  • ½ teaspoon Sesame Oil

Steps
  1. Cook shallots with 4 tablespoon oil on High power for 6 mins, uncovered, stir in between.
  2. Cook dried shrimps on High power for 1 min, uncovered, add 1 teaspoon shallot oil, cook for another 1 min, uncovered
  3. Cook pumpkin with 2 tablespoon water on High power for 6 mins, covered with lid, mashed.
  4. Cook salted egg yolk with 2 teaspoon water on High power for 2 mins, covered with lid, mashed.
  5. Mix together rice flour, tapioca starch, water, seasoning, pumpkin, salted egg yolk, mushroom, dried shrimps, half portion of cooked shallots, cook on High power for 4 mins, uncovered.
  6. Stir, cook on Medium power for 16 mins, covered.
  7. Do not serve immediately. Wait for 2-3 hours when pumpkin cake sets. 
  8. Top with the remaining shallots, spring onion. Serve and Enjoy!


Notes:
Use the salted egg yolk only (not the whites).
You may adjust the quantity of mushrooms and dried shrimps to your liking.

If you can't finished the pumpkin cake, any remainder can be kept in the fridge and heated up the next day for consumption. I used a heart shaped cutter to cut out a portion of the pumpkin cake, pan-fried it, topped with spring onion, chili padi and freshly microwaved shallots and.... tadah!..  Sweetheart Pan-fried Pumpkin Cake!!! Frying it ala the carrot cake (chai tow kuey) omelette style might be a good idea too. Why don't you try it and let me know if it works??


{RECIPE} PUMPKIN ROLL WITH SALTED EGG YOLK

Ingredients
  • 300g Pumpkin (cubed)
  • 4 Salted Egg Yolk
  • 3 Shiitake Mushroom (diced)
  • 30g Dried Shrimps (soaked, drained)
  • 1 Packet Spring Roll Pastry Skin Sheets (5"x 5")
  • 80g Shallots (sliced)
  • 4 tablespoon Oil
  • 1 Egg Yolk (beaten)

Seasoning
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • ¼ teaspoon Five-Spice Powder
  • ½ teaspoon Sesame Oil

Steps
  1. Cook shallots with 4 tablespoon oil on High power for 6 mins, uncovered, stir in between.
  2. Cook dried shrimps on High power for 1 min, uncovered, add 1 teaspoon shallot oil, cook for another 1 min, uncovered
  3. Cook pumpkin with 2 tablespoon water on High power for 6 mins, covered with lid, mashed.
  4. Cook salted egg yolk with 2 teaspoon water on High power for 20 secs, covered with lid, mashed.
  5. Mix together pumpkin, salted egg yolk, mushroom, dried shrimps, shallots, seasoning.
  6. Place 2 full teaspoon of mixture onto 1 spring roll pastry sheet, roll up, sealed with egg yolk .
  7. Preheat oven at 200C till hot 
  8. Bake pumpkin spring roll in a preheated oven at 200C for 10 mins, use top shelf.
  9. Egg wash baked pastry, bake for another 5 minutes. 
  10. Serve immediately. Enjoy!


Notes:
The above ingredients portion is sufficient to make 16 pumpkin rolls.
