A Noodle Story ~ A Singapore-Style Ramen Stall @ Amoy Street Food Centre


Noodles, noodles, how do I enjoy thee? Let me count the ways... Mee Pok, Mee Kia, Sapporo, Hakata...

Ooh wait! Now there's a new way! The Singapore-style Ramen way!


For a noodle and ramen lover like me, I'm excited much at the establishment of A Noodle Story with their promise of an ultimate noodle dish which one will never forget. The brainchild of a pair of chefs who were trained at Shatec and has worked at a couple of years in some of the best restaurants in the Singapore, they aim to bring quality noodles at an affordable price to the masses. Marrying modern techniques and re-engineering of local hawker favorites, their very own Singaporean-style ramen to suit local tastebuds is born.


From afar, the bowl of noodles looks not unlike a bowl of dry mee kia with a bowl of accompanying clear soup. On a closer look, it is much more than that with an interesting combination of toppings.


Indeed, the bowl of Singapore-style Ramen ($5) packs a generous load of ingredients which you don't find in your usual bowl of mee kia. It's like having the best of a few nations in a bowl. First of all, there is the Hong Kong-style Wanton. The dumplings is fresh and with a nice bite. A touch of Vietnamese influence is seen in the Potato Wrapped Prawn. Deep fried just before serving, a bite into the crispy outer strips reveals shreds of potato, which is similar to rosti, encompassing a prawn. Very enjoyable! Char Shu and Hot Spring Egg which are essentially Japanese joins in the party as well. The char shu is competently tender but can do with a tad more flavour. The egg is executed with a nicely set white and creamy yolk. If you can't get enough of all these, do order a bigger portion of the noodles which comes with more toppings ($6/$7) or have it separately as side orders ($1-$3).


Now, the most important aspect of any noodle dish has to be the noodles itself. The thin egg noodles were cooked just right, neither too soft or too hard with a perfect springy texture. I love the special dry sauce! It is a savoury delight with its fragrant notes of dried shrimps, somewhat similar to XO sauce. Both noodles and sauce will make a brilliant combination when tossed together, if not for the lye water taste in the noodles which came across as a tad too strongly. Quite a pity, but overall, the Singapore-style ramen is still worth a try.

  1. I also loved their noodles and the generous ingredients that they are giving to the eaters. Do not have a chance yet to bring my family to eat as they are open during weekdays only.
