Tien Court 天厨 @ Copthorne King's Hotel ~ Usher In The Year of Monkey With A Sumptuous Feast!



[CNY 2016] Herald the Lunar year of Monkey with a sumptuous feast at Tien Court 天厨!

The well-loved Chinese restaurant, best known for its host of Cantonese and Szechuan delicacies, has much to offer in terms of auspicious creations and enticing takeaways during this festive season.

So off I went, highly in anticipation of the highlights that Tien Court has in store. Prosperity Pen Cai! Sautéed Lobster with Foie Gras! Oh my Tien! I'm coming!


My first impression of the restaurant was undeniably of old-school grandeur. Look at that huge red banner hanging over the main door and a pair of lion dogs "guarding" the entrance. But upon stepping in, it morphed into a heavily-wooded and golden interior that beams much of a contemporary Oriental appeal.

A marriage of old and new. Perhaps we can use it to describe the culinary experience at Tien Court too.

The kitchen is helmed by Masterchef Ho Tien Tsai who has been cooking at Tien Court for over 20 years! You might find the Taipei-born chef familiar as he's a regular on local TV cooking programs such as 3-Plus-1 (三菜一汤) and I Cook for U (名厨上菜).


We tried some of the dishes from Tien Court's Chinese New Year Set Menus which ranges from $68 to $118 per person (minimum 4 persons) and $688 to $1888 per table (for 8 to 10 persons), starting with the Prosperity Swordfish and Salmon Yu Sheng (发财三文鱼鱼生).

This rendition very much sticks to the traditional, with a focus on the freshness of the swordfish and salmon coupled with crunchy julienne vegetables and a zesty sweet dressing. The harmonious blend of textures and flavors certainly led us off to an appetizing start.


No denying that we all loved the Prosperity Pen Cai (盆菜)! Such an indulgent pot brimming with lip-smacking goodness of abalone, fish maw sea cucumber, conpoy, chicken, duck webs, dace ball, mushrooms, dried oysters, black moss, roast pork, prawns and Tian Jin cabbage.

Double-boiled Superior Shark's Fin in Shark's Cartilage Soup (鲨鱼骨炖中鲍翅) is another delicacy which held our attention to the very last drop. The shark cartilage soup is reduced to a luscious viscosity after at least 8 hours of boiling, boasting of wondrous collagen in every sip. If shark's fin is not to your liking, there is the version with fish maw too.


A newer, innovative dish would be the Sautéed Lobster with Foie Gras (鹅肝酱龙虾). Love the firm and succulent lobster meat, but I thought the foie gras sauce can be more intense.

Steamed Glutinous Rice with Preserved Meat in Lotus Leaf (荷叶八宝饭) is a perennial favorite that would bring smiles to any dinning table.

The meal ended with another classic Chinese New Year auspicious treat, Nian Gao (年糕) which symbolizes rising to greater heights, as well as Snow Pear with Red Wine (红酒雪梨) to refresh the palate.
