Paradise Group Opens Le Shrimp Ramen @ Paragon Orchard ~ This Is A Real Winner! Must-Try!



Paradise Group has just added another restaurant to its portfolio: Le Shrimp Ramen!

So is it Chinese la mian? or Japanese ramen? Le Shrimp Ramen actually marries both Chinese and Japanese culinary influences! This is Singapore's very first Chinese la mian concept to offer shrimp broth!

The idea came about while Paradise Group's CEO Eldwin Chua was in Japan. A specialty ramen stall that sells flavorful shrimp-based broth left such a deep impression on his mind that he became inspired to recreate the broth and put a Chinese spin on it by using local ingredients.


Fast forward to months of experimenting later: The culinary team at Le Shrimp Ramen will meticulously prepare the broth by baking big fresh prawns (sourced from our local fisheries) at 180°C for 45 minutes before hand-grinding it to a fine texture. It is then simmered for more than 8 hours with premium conpoy, and a blend of spices including star anise, cinnamon, clove, as well as white peppercorn.

When I took my first sip of the broth, I went "WOW" literally. The orange-hue broth was bursting with rich crustacean flavors and... wok hei!

I later learned that each bowl is prepared by stir-frying cabbage pieces over high heat in scallion oil before prawn broth is added, giving it that distinctive smoky aroma. This brilliant step really added extra depth to the noodle dish.


Despite sparing no expenses in use of premium ingredients and efforts in preparation method, prices are keep surprisingly affordable with noodle bowls ranging from $6.50 to $19.90 each.

My recommendation would be: Go for the Le Signature Trio Shrimp Ramen ($19.90) which comes with big, crunchy prawns, handmade ebiko prawn paste (shaped out of 100% prawn meat), and succulent prawn dumplings. Coupled it with springy la mian, this is a real winner.

If you prefer to have some meat in your bowl, the Big Prawns & Braised Pork Rib Shrimp Ramen ($17.90) will suit as it comes with chunks of braised pork ribs that are so meltingly-tender.


I do not have sufficient tummy space to try everything on the menu, but friends have told me that the Ebiko Prawn Paste with Chili Vinaigrette Ramen ($11.90), tossed in a special blend of appetizing chili vinagrette, is very enjoyable too.

The Red Garoupa with Pickled Vegetable Tonkotsu Ramen ($18.90) is another bowl which sounds worth a try.

There are also side dishes such as Long Jing Tea Lava Egg ($1.90), Braised Beancurd in Tonkotsu Broth ($3), and Twister Prawn Rolls ($5.90) to make the meal even more varied.
