The Bird Southern Table & Bar @ MBS ~ Crispy Fried Chicken & Waffles By US' Award-Winning Yardbird

The delightful combination of fried chicken and waffles is loved by many, and is one of the most popular brunch items around. For fans, here's a place to check out for yet another version: The Bird Southern Table & Bar!

Opened by restaurateur John Kunkel who is also behind the award-winning Yardbird Southern Table & Bar in Miami and Las Vegas, the first Asia outpost at Singapore's Marina Bay Sands serves to bring an experience of Southern US comfort cuisine to our local shore.

We were understandably excited about making a visit.

The 190-seater restaurant incorporates a modern-rustic design, and spans over two levels.

Between the first level which is darker, cozier and more intimate, I prefer the upper room which boasts of natural daylight and a scenic view overlooking the picturesque Marina Bay waterfront.

Such a setting is most ideal for that relaxing weekend brunch after a long week slogging for the sake of some dough. Life is not exactly comfortable most of the time, that's why all the more we need comfort food.

Everyone's definition of comfort food might be different, but the pursuit of that sense of consolation as we're lost in indulgence till everything else (fats, carbs, sugar content) doesn't matter, can be said to be the same. Lol!

Nothing can personify it better for me than..... fried chicken!

The Bird does a kick-ass rendition! Their signature Southern-style Lewellyn's Fine Fried Chicken ($35) is based on their famous 100-year-old recipe. Hormone-free chicken is first brined for 27-hours, then dredge in a secret recipe of spices and flour, before the final step of frying.

Our Chicken 'N' Watermelon 'N' Waffles ($45) arrived looking promising with 4 pieces (half a bird) of Lewellyn's fine fried chicken, chilled spiced watermelon cubes, and cheddar cheese waffle.

The chicken was all of juicy, tender meat perfected by a thin layer of crisp batter. It lived up to our expectations.

We didn't really fancy the waffle, and wished it was fluffier and had a better crisp. The accompanying bourbon maple syrup was excellent though, and lifted the waffle with a much appreciated smoky sweetness.

While we enjoyed the fried chicken, the amount spent had us wondering if it's worth the buck. Afterall, it's not difficult to get quality fried chicken in Singapore at a price-point that's more comfortable for the wallet.

Other notable items on The Bird's menu includes Classic Buttermilk Biscuits ($10), Shrimp "N' Grits ($39), Macaroni & Cheese ($14), Deviled Eggs ($14) with dill, chives, and smoked trout roe, as well as Low Country Laksa ($), a Singapore-inspired dish featuring snapper-fillet in caramelized ginger coconut broth, and served with Carolina gold rice pirlau, a heritage rice grain that is indigenous to South Carolina.

The Butter Lettuce & Grilled Mango Salad ($18) with mango, smoked pecans, red onion and tomato in benne seed vinaigrette was a refreshing side to have. Those pieces of sweet, char-grilled mango were especially lovely.

Our unanimous favorite starter was the Fried Green Tomato BLT ($18), an umami bomb of house-smoked pork belly atop deep-fried crusty green tomato, and pimento cheese. What a wondrous interplay of textures and flavors in each bite!

While delectable desserts can make us selfish (mine, all mine haha) at times, I would recommend sharing it as selections such as Salted Caramel Bread Pudding ($16), Café Crème Brûlée ($16) and Banana Pudding ($14) can come across as rather heavy after a full-filling meal. Not applicable for you who have ample tummy space :p
